Spiced Christmas Cookies
Ingredients:
1 stick softened unsalted butter
Packed light brown sugar 1/3 cup
1 egg, separated
Sifted flour 1 ¼ cp
Ground cinnamon 1 tsp
Ground ginger ½ tsp
Grated nutmeg ¼ tsp
Ground cloves ¼ tsp
Granulated sugar 2 tbsp

Direction:
Blend and beat butter and sugar together till they are light and fluffy. Keep aside two teaspoons of egg white, and blend the rest of the separated egg into the mixture and stir well. Into the soft dough stir in the spices and four, kneading and roll this dough to a thickness of about ¼ inch and cut them into Christmas shapes, of stars etc. Smear these shapes with the egg white and bake them for approximately 10-12 minutes and let them cool to room temperature before dusting with icing sugar.



Sugar and Spice Sparklers
Ingredients:
Unsalted butter 3 tbsp
Fine sugar ¼ cup
Grated rind of half a lemon
½ beaten eggs
Ground almonds 1/3 cup
Flour 1 cup
Mixed spice ½ teaspoons
Raspberry jam 3 tbsp
Confectioner's sugar 2 tbsp
Ground cinnamon ½ tsp

Direction:
Mix butter, sugar and lemon rind together until they are light and fluffy. Slowly add beaten egg and stir in the ground almonds with the mixture. Sift the flour, spices and knead into the mixture and then chill for ½ hour and roll out the dough having at least 18 inches thickness before you cut them into cookie shapes. Bake the dough for 10 to 15 minutes and let them cool in room temperature apply apricot preserve to sandwich the cookies into pairs and allow them to cool further to dust them with confectioner's sugar and ground cinnamon.

Cookie Candy Canes
Ingredients:
2 sticks unsalted butter
Confectioner's sugar 1 ½ cup
Vanilla extracts ½ tsp
Peppermint extracts ¼ tsp
Flour 2 ½ cups
Salt ¼ tsp
Crushed peppermint candy 2 tbsp
Red food coloring ¼ tsp

Direction:
Beat the butter till its soft and then beat in the sugar till the mixture is fluffy and add vanilla, egg and peppermint extract. Stir in the flour and salt until they have well blended. Massage into the firm dough and divide it into two parts. Add the crushed candy and red color in one part and wrap both the dough into tight plastic and keep in refrigerator.

After half an hour, take out both the dough and cut out small balls from each, and roll out into 4 inch long shapes. Twist the plain dough with the colored dough and form a twisted length with alternating color and mix the end to form a cane. Set these canes 2 inches apart on the baking sheet and bake for exactly 10 minutes, and do not let them become brown and cool them completely before storing in an airtight container.
