Ginger and Apple Sled Tarts
Ingredients
1/2 of 17.3-oz. pkg. frozen puff pastry sheets (1 sheet), thawed
1 egg, slightly beaten
1 Tbsp. water
2 Tbsp. coarse or granulated sugar
2 Tbsp. finely chopped crystallized ginger
2 small baking apples, cored, halved and thinly sliced
Crab apple sprigs (optional)

Directions
You can preheat the oven to apparently 400 degrees and line a large baking sheet with parchment paper which should be set aside. On a lightly floured surface unfold the pastry and into a 12 inch square roll the pastry. Trim a 1/2-inch strip from one side and use it to make leaf garnishes, if desired. On a prepared baking sheet place the pastry square and cut it into half to form rectangles and separate them slightly and prick the pastry rectangles all over with a fork. Blend the egg with water in a small bowl, and brush the pastry with the egg mixture and fold in all edges of each rectangle should be about ¼ inch and you can also form a rim as you press them lightly. Now brush the folded edges with egg mixture and set the pastry aside. Stir together sugar and ginger in a small bowl and arrange apple slices over the pastry and sprinkle with sugar. Bake this pastry for 20 to 25 minutes until the pastry grows deep golden brown shades and is crisp as well. Let the pastry cool on the baking sheet on a wire rack. Transfer to a cutting board or platter when it's cool and cut it crosswise into rectangles. For leaf garnishes cut leaf shape cutouts from the strip of puff pastry and brush undersides with egg mixture and attach them to the sides of the tarts.



Sweet Potato Cake with Bourbon and Pecans
Ingredients:
3/4 cup bourbon
1 cup golden raisins, or use dark raisins
1 1/2 cups mashed sweet potato
2 cups granulated sugar
2 tablespoons melted butter
4 teaspoons vanilla extract
1 1/3 cups all-purpose flour (stir before measuring)
1 1/2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
Dash ground nutmeg
1 1/2 cups chopped pecans
3/4 cup milk, low fat is fine
Simple Bourbon Glaze

Direction:
Combine the bourbon and raisins in a small bowl and let it stand for sometime at room temperature for almost an hour or two. Preheat the oven to at least 325 degree and butter and flour a 10-inch nonstick Bund cake pan or tube pan which is to be set aside. Blend the mashed sweet potato, granulated sugar, melted butter, and vanilla in a mixing bowl and beat on medium speed until its smooth. Mix the flour, baking soda, salt, and spices in a separate bowl, add the dry ingredients to the first mixture and blending in slowly. Blend and stir the chopped pecans and milk. Into the prepared pan pour the batter and bake for 50 to 60 minutes until the cake is spongy. Take it to room temperature and cool in pan on rack and chill for a few hours. Dip the pan in warm water for a few minutes before serving you can also heat the cake in an oven for about 3 minutes at 250 degrees. Invert the cake onto a large serving plate and as you do so be careful to loosen the sides and the center of the cake from the pan.

You can serve either with bourbon whipped cream or drizzle with the Simple Bourbon Glaze and it gives 12 servings approximately. For the simply bourbon glaze you need, 1 cup confectioners' sugar, 1 teaspoon bourbon, 1 teaspoon vanilla extract, 1 to 2 tablespoons hot water. All you need to do is to mix the ingredients together by adding enough water to make a drizzling consistency and spoon it over the chilled cake immediately before you serve it.
